This chop is cut from behind the center cut chop toward the tail of the hog. You might get lucky enough to score a loin chop with a little piece of tenderloin. Wait, isn't that a porterhouse chop? Almost! Around here we have standards and a porterhouse chop should have at least an inch of tenderloin for quality, anything less is probably delicious but doesn't quite cut it. The loin chop is a great budget chop without compromising on quality and taste.
